Ingredients for 2: 🍠1 sweet potato (around 350g) 🍠1 egg 🍠4 tbsp cornstarch 🍠30g grated emmental cheese 🥑guacamole: 1 avocado, 1 tbsp lemon juice, thinly cut coriander (or not), salt and pepper 🥚2 poached eggs Steps : 1. Preheat the oven to 200°Celsius 2. Peel the sweet potato and then grate it 3. Press the grated sweet potato over a bowl with your hands or with a towel to remove as much water as possible. 4. In a bowl, add the grated sweet potato, egg, cornflour, grated emmental, salt, pepper and paprika to taste and mix. 5. On a baking tray lined with baking paper, form the fritters (I made 6 of them). 6. Bake in the oven for 30 minutes, flipping them over after 15’. 7. Serve with guacamole: mix 1 avocado, 1 tbsp lemon juice, thinly cut coriander (or not), salt and pepper until smooth. 8. Poached egg: For the perfect egg : in a saucepan, boil water with a tablespoon of white vinegar. When the water is simmering, form a tornado 🌪️ with a wooden spoon and pour an egg into the center of the tornado. Cook in the simmering (not boiling) water for 2-3 minutes. Remove the egg with a spoon and place on a paper-covered plate to absorb the water. Add on top of the sweet potato fritter and guacamole for extra protein.
