I grow things for lots of reasons and harvesting my produce is just one of them. I share my love of gardening not just so more people will know how to grow food but so they (you) will get the many other benefits that makes people fall in love with gardening. The process of doing, watching, learning and taking the time to create something valuable by the time you invest in it. Lemongrass is just one of lots of projects in my new book ‘Give it a Grow’ that I hope will give people a mindset of possibility and curiosity beyond the harvest. What I did with my lemongrass: The thick stems fresh for cooking The leaves I trimmed from the thinner stems for winter, wrapped in to neat bundles and frozen to drop in to soups and stocks The thicker outer parts of the stem cut in to strips and crushed with a rolling pin, frozen to add to infusions like turmeric milk The leaves from the top of the thick stems, cut up and dried to make tea I was enjoying experimenting and will be interested to see the best uses of each part I’ve kept and stored in different ways. I’ve always found I learn most by doing and that’s what I love about growing food and cooking. The freedom to experiment. The soup is very loosely based on a Tom Yum for the initial stock base - but after that it is not traditional but is very tasty. 600ml Stock - chicken or vegetable 1 crushed lemongrass 1 small chilli (depending on heat - this one’s fiery) 3-4 slices of galangal 4 kefir lime leaves 2 cloves garlic rough chopped (In the past when I don’t have galangal and lime leaves I’ve used some fresh ginger and the outcome is also delicious) Simmer for 10-15 minutes Remove the aromatics then add Juice 1 lime Generous splash of fish sauce 1 tbsp sugar Handful of Mushrooms 10 Cherry Tomatoes halved 1 shallot cut in to strips Thick rice noodles (rice sticks) i recommend soaking these before adding, rather than just chucking them in like I did. The soup is already delicious but if you want it to be creamy - I add a tsp of red Thai curry paste and a little evaporated milk, although coconut milk would also work.
