The tissues that make up the broccoli stem organize around each other forming the incredibly beautiful structure that you see in the video. It is amazing to think that every time you eat broccoli you are eating such a masterpiece of biological art. . Broccoli is an angiosperm plant (a plant that produces flowers). More specifically, broccoli is a dicot angiosperm plant. That means that the vascular tissue of this plant forms a ring-like structure around the middle of the stem (you can see this structure in the first microscopic image). . A broccoli stem (like the stem of any other dicot plant) is composed of several layers of cells. In the broccoli stem that I looked under the microscope you can see all these layers of cells. . The outermost layer is the epidermis. This layer of cells protects the stem and prevents water loss. Underneath the epidermis is the cortex, which is composed of elongated cells that store water and nutrients. The next layer is the vascular tissue, which is made up of xylem and phloem cells that transport water, nutrients, and sugars throughout the stem. Finally, in the very center of the stem there is the pith, which is made up of beautiful packed cells that look like bubbles. . I am mesmerized by the shape and color (after the staining) of the broccoli pith stem cells at high magnification! . Biology is amazing!! .
